Petits-gris and gros-gris snails from the snail farm
The snail farm, which has been set up in Winville in the Léglise area (Province of Luxembourg) carries out three kinds of artisanal production: snail farming, making biscuits and growing organic produce. All their food production is done in their own workshops with passion for the activity. To add to this, there is a farmer's market every Friday evening with other artisans of the region.
Nathalie specialises in snail farming and preparation. Some of the year's 70,000 petits-gris and gros-gris, placed in jars, are poached in stock (court-bouillon). Others are sold ready-to-eat: mostly in garlic butter, but also using other original recipes from Nathalie's kitchen. Regardless of the preparation method used, they are sold to individual customers and to caterers, the region's restaurants and hotels. A visit to the farm and water treatment plant combined with a tasting session can be arranged for a small fee.
Thierry, a baker by trade, prepares over twenty types of biscuits in his own workshops: a wide choice of home baking to savour or to give as a gift-wrapped present. This year he is starting to grow organic vegetables on the land behind the farm.
Our natural products are available in different weekly or monthly markets in the Province of Luxembourg and in other annual events at our farm specialising in artisanal food. We also have a farmer's market on Friday evenings where not only our own produce, but produce from the other artisans in the region of the natural parks of Haute Sûr, Forest of Anlier and Vallée de l'Attert can be found. The stalls all offer you gourmet hampers with a variety of their produce which would make an original present or provide a good way to discover the gastronomical wealth of the region.
